1- Heat olive oil and add minced garlic.
2- Add minced cilantro, oregano, salt, and pepper.
3- Add orange juice. Cook for 10 min on medium-low heat, and set aside to cool.
5- Marinade tuna in the cooled sauce for at least 2 hours.
6- Coat tuna in Panko.
7- Pan-sear tuna with olive oil to the desired temperature.
8- Slice and plate, garnish mango salad with fried shallot.
